Energy Balls, Healthy Snack, Newgreens Energy
cup chopped pecans
chopped and pitted Medjool Dates
chopped candied ginger
vegan dark chocolate chips or chopped chocolate chunks
ground cinnamon, optional
dried shredded coconut
Place the pecans in a food processor and process until finely ground (but not pasty).
Add the dates and NewGreens® and process well.
Transfer to a bowl and add the ginger, goji berries, chocolate chips, and cinnamon and cardamom, if using, and Mix well.
Form into 10-12 small balls and coat with dried coconut before serving.
Makes 10-12 balls
Lasts for up to 1 week in a glass container in the fridge.
